Yuca al “Mojito”

Ingredients: • 1 bag of frozen yucas (about 10-12 pieces) • one whole big onion • ½ cup of olive oil • ½ cup of vinegar • ground pepper • 3-4 bay (laurel) leaves • 2 whole garlic cloves
Directions: -Boil 1 bag of frozen yucas in salt water until they are very, very, very tender. (Between 40 mins. to 1hr.) -While yucas are boiling slice one whole big onion, add ½ cup of olive oil, ½ cup of vinegar, and dash it with ground pepper. -Then add 3-4 bay (laurel) leaves and 2 whole garlic cloves. -Thinly crushed in your “pilón”. -Add all ingredients to the tender “yucas”. You will love it!
