Valdosta de Mejillones/ Mexican Steamed Mussels

Ingredients: 1 cup dry white wine 1 & 1/2 cups water 1 onion, chopped 1 tomato, seeded/chopped 1-2 Serrano or jalapeño peppers, sliced 2 Cloves garlic, minced 1 bunch fresh cilantro, stemmed and chopped 1/2 teaspoon salt 1/2 teaspoon black pepper 4 inch small mussels, scrubbed
Directions: Bring wine to a boil in large pot over high heat. water, onions, tomato, peppers, garlic, cilantro, salt and black pepper. Return to a boil. Add the mussels and cover pot. Cook, stirring once or twice for 8 minutes, or until shells open wide. Discard any with cracked shells or that don’t open. Put mussels and some broth into bowls and sprinkle some chopped cilantro on top.
