Arroz con Calamares

Ingredients: • 2 cups of white rice • 2 cans of calamari in their black ink • 1 large onion thinly chopped • 3 spoons of olive oil • ¼ to ½ cup of olives and capers • 3 spoons of sofrito
Directions: Heat olive oil Add sofrito, onions, olives/capers Add all the contents of the cans of calamari Add 2 cups of rice Add 2 cups of water Small jar of fancy pimientos (pimientos morrones) Bring all ingredients to a boil in high heat. When boiling lower to medium till almost dry. Stir well – cover pan and lower heat to medium/low. It will take more or less 30 to 45 minutes for rice to cook. Garnish with fancy pimientos (pimientos morrones)
